Goofy's Kitchen - September 2004
Cookie Recipe Request
I made cookies last night for a potluck today at work. I made a recipe I have tweaked through the years to what my kids believe are the best oatmeal cookies around and I guess they were right because I got several requests for the recipe today. So here it is -
Oatmeal Carob Cookies
Preheat oven to 350 degrees. Lightly grease cookie sheets.
Makes 3 dozen cookies. Enjoy.

- 1 cup butter - softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 2 cups flour
- 1 tsp baking soada
- 1/4 tsp salt
- 1 cup carob chips or mini semi-sweet chocolate chips
- 3/4 cup craisins (cranberry raisins)
- 2 cups cooking oats
Makes 3 dozen cookies. Enjoy.

More of my favorite pages
So in my quest to preserve all the years of hard work and irreplaceable pictures, here are a few more of my favorite pages. I'm almost done scanning 2004. However, last night I bought a Cricut and I'm afraid I might get sidetracked for awhile. It's super fun and I made a card in the first 1/2 hour upon opening the box, so super easy too. I can't wait to do more.
Two really fun pages with water themes. As you can see the pages are simple as I didn't have a lot of extra cash for scrapbooking materials.

Yummy Soup Recipe
Just made soup for my daughter and I - super yummy, only take 1/2 an hour. This recipe was given to me by a friend - try it I'm sure you will like it. I used my cast iron dutch oven given to me by my kids last year for christmas - Paula Dean in Red (of course) - works great and makes soup spectacularly. And it's WW Filling Foods only (for those of use trying not to go backwards).
Joan Lunden's Chicken Tortilla Soup
In large saucepan or dutch oven, saute over low heat for 5 minutes until onion is soft:
Stir in 1/3 cup nonfat sour cream, salt and pepper to taste.
Add cilantro and lime juice to garnish.
You can cut corn torillas into 1/4" strips, bake on cookie sheet coated with cooking spray for 10 min at 400 for low fat tortilla chips. Use as garnish on top of soup.

- 1 minced garlic cloves
- 2 tbsp vegetable or olive oil
- one 4 ounce can green chilies - chopped
- one 15 ounce can italian stewed tomatoes with juice
- 4 cups chicken broth
- 1 pound skinless boneless chicken breasts, cut into small cubes
- 1 tsp lemon pepper
- 2 tsps worcestershire sauce
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp hot sauce (I like tabasco green)

Saving Scrapbook Pages for Posterity (or in case of fire)
So originally I wanted to save my years of scrapbooks to a place that in case of catastrophe they wouldn't be lost. So in hopes of sharing some of my favorite memories, here goes. I'm hoping to creat a links page so that people can view my scrapbooks, after I scan and save them of course. This could take awhile.
So here are my twins, I love their smiles in this picture. Gee you think they are used to posing? Poor children never get their picture taken.

Blogging - Does anyone really read this stuff?
Hi all,
I've been thinking about this for awhile now. I used to publish a monthly web page that my family really seemed to enjoy. It had pictures and stories about what was going on with all of us during the month. However, does anyone really read this stuff? And who really cares what I have to say? I wonder.
As the mother of five incredibly busy children, there isn't a problem finding something to write about. As my children get older, I reflect on what I've learned as their mother and the many blessings I have received. My oldest son is graduating from high school this year. My youngest are 10 years old (twins). I have a long way to go. I will be volunteering at the high school until 2017 (if they all graduate on time).
In the meantime, I will be posting my thoughts on motherhood, quilting, scrapbooking, reading, nursing and maybe even snowboarding (if I can get up the hill this year). Hope you enjoy. - Dana
